
A very hands off, but extremely tasty recipe – this combines the crispiness of the chicken skin with the tender, almost falling apart, meat. Though it does take nearly an hour in the oven, it will only take you about 5 minutes of prep work to have everything ready.

Ingredients
- 8 chicken thighs bone-in, skin-on
- 1/4 cup olive oil
- 2 tsp yellow curry
- 1 1/2 tsp salt
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- 1/2 tsp allspice
- 1/2 tsp chili powder
- 1/2 tsp ground coriander
- 1/4 tsp ground cardamom
- 1/4 tsp ground cinnamon
- 1/4 tsp ginger
Instructions
- Preheat oven to 425F.
- Mix together all spices into a bowl.
- Wrap a baking sheet in foil and lay all 8 chicken thighs onto the foil.
- Rub olive oil evenly into all chicken thighs.
- Rub spice mixture on both sides of the chicken, coating liberally.
- Bake for 50 minutes.
- Let cool for 5 minutes before serving.
