Ingredients
- 2 large broccoli heads, cut into florets
- 1 cup dried cranberries
- 1/2 small red onion chopped
- 1/2 cup celery chopped
- 1 cup mayonnaise
- 1/4 cup white sugar
- 1/2 cup rice vinegar
- 1/3 cup cashews
Instructions
- Mix broccoli, cranberries, onion, and celery in a large bowl. Whisk mayonnaise, sugar, and rice vinegar together in a bowl; pour over broccoli mixture. Toss to combine. Sprinkle with cashews just before serving.
- Cook's Note:If you're not a fan of raw broccoli, a good idea is, before cutting up the broccoli, to place the heads in boiling water for 3 seconds. This gets rid of the raw taste. The stalks may also be included if desired. It doesn't really affect the taste.
